Low Carb Version of Tacos

Ingredients

Tacos Beef Filling

  • 500 g minced beef
  • 2 carrots diced
  • 400 g kidney beans
  • 1 red onion
  • 1 tsp paprika
  • 1 tsp cumin
  • 10 g fresh coriander chopped
  • 3 tbsp red wine or beef stock if you prefer non alcohol
  • 2 tbsp olive oil
  • 1 dash salt & pepper

Tacos Wraps

  • 20 lettuce leaves cleaned
  • 1/4 cup sour cream
  • 1/2 cup grated cheddar optional

Instructions

Tacos Beef Filling

  1. Peel and cut the red onion in slices.
  2. In a sauce pan warm 2 tbsp olive oil
  3. Grill the red onion until soft and tender.
  4. Peel and dice the carrots finely.
  5. Add the carrots in the sauce pan.
  6. Cover and simmer for 10 minutes.
  7. When the carrots are soft add the minced beef, kidney beans, paprika, cumin and fresh chopped coriander.
  8. Stir well until all the meat is cooked enough.
  9. Add the red wine.
  10. Cover and simmer 5 minutes.
  11. Add salt, pepper.

Tacos Wrapping

  1. Clean lettuce leaves.
  2. Remove extra moisture by lying them onto absorbent paper.
  3. Fill the lettuce wrap with the tacos filling.
  4. Top up with fresh coriander and sour cream.
  5. Optionnal: add grated cheddar.
  6. Hold with a square of baking paper or papper towel.
